yes, you can use cabbage, cauliflower, lauki (bottle gourd)or any other flavor. The flavor will change but will still be good.
The reason we added the zucchini is because it gives a lightness to a otherwise heavy to digest daal. Also, the zucchini retains it’s shape after the cooking.
